Tomas Estes has been a bar and restaurant owner for 37 years, having founded the Pacifico Group in 1976. In addition, Tomas has been recognized twice by the Mexican National Tequila Chamber with the title of “Ambassador to Europe for Tequila” and received a Life Time Achievement award from “Theme” magazine for his work with Tequila in the hospitality industry.
Tomas has a true love of Tequila that shines through all he does. He is often found as a guest speaker, talking about the taste and process of hand crafted Tequilas to educational groups and connoisseurs.
El Nivel is Tomas's 18th bar opening.
Massimiliano has been working with Pacifico Group for over 8 years as bartender and manager. Having attended countless trainings, tastings and seminars by the most important people in the tequila and mezcal industry he is a true aficionado of agave spirits. Originally from Santhia' near Turin he has a true passion for cocktails and quality drinks. His cocktail recipes have been published in such books as "The Tequila Ambassador" and the others.
He has been working closely with Tomas Estes on El Nivel from the very first steps.

Eamonn has over 35 years experience cooking Mexican and Latin fusion dishes across the world. He is also a Cordon Bleu chef.
